The Emerald Island Casino in Downtown Henderson is pleased to announce Stacey Nichols as their new purchasing manager. In her role, Nichols will supervise and control food cost, maintain bids, negotiate pricing, conduct inventory, ensure product safety and quality checks, as well as maintain relationships with vendors, staff and management.
Nichols has over 20 years of experience in the culinary industry, having worked in every position in the front and the back of the house. Before joining the Emerald Island Casino, she worked as a purchasing specialist at Nusr-Et Steakhouse, purchasing manager at The Sundry Food Hall, and assistant general manager for the Brass Fork Cafe inside Palace Station.
“We are thrilled to have someone with as much culinary experience as Stacey joining our team,” said Tim Brooks, general manager of the Emerald Island and Rainbow Club Casinos. “Her expertise helps us ensure we provide the finest quality of food for our valued guests, at the best possible prices.”
Nichols graduated from Le Cordon Bleu in 2011 with a major in Culinary Arts and a minor in Hospitality Management. She is a southern Nevada native, and enjoys taking Pilates classes, always looking up healthy recipes for special dietary needs, and she is a huge fan of attending events such as food festivals, renaissance fairs or car shows.
